A vertical batch freezer allows you to have more control over the ice cream
making process compared to traditional batch freezers. This is because
with a vertical batch freezer the gelato chef will be able to pour the
ingrediants directly into the freezing chamber and watch as the gelato
mix turns into today's hottest treat.
The Stoelting VB35 Vertical Batch Freezer
(pictured) is able to produce 25 quarts of gelato per hour. Its large
large diameter freezing cylinder allows for extremely fast freezing
times, resulting in very small ice crystal formation and perfect
tasting gelato.
