Pressurized Milkshake Freezer
A Pressurized milkshake freezer
is one that is equipped with mix pumps that transfer the milkshake mix
from the mix hopper to the freezing cylinder. While the mix is pumped
into the freezer, a controlled amount of air is added to the product.
This air creates pressure, which is then used to force the milkshake
from the cylinder while dispensing. Typically this creates more overrun
than gravity freezers.

Gravity Milkshake Freezer
The mix in a gravity milkshake freezer
is fed by mix feed tubes instead of mix pumps. As the name suggests,
the milkshake mix is fed through these tubes by gravity into the
freezing cylinder. Gravity milkshake freezers typically serve the
product at a slightly warmer temperature and with lower overrun.
